ENKI > Carmenère / Carignan

Once the grapes are received at the Pelequén Plant, a meticulous selection is made of the best clusters. These are macerated at low temperatures for 7 days prior to starting alcoholic fermentation. The must ferments at between 26 and 28º C and then, once the wine is obtained, this is kept in casks where malolactic fermentation takes place. After 18 months of ageing, the final blending and bottling is carried out.
